Chef Craig’s experience and knowledge of cuisine has made him our primary caterer for all our weddings and events. He began working in the restaurant industry over 40 years ago and he considers it his passion. He is classically trained and is a graduate of Johnson and Wales Culinary Arts. He also attended Hilton School of Hotel and restaurant Management at the University of Houston.
 
He has worked in Rhode Island, Connecticut, New Hampshire, Pennsylvania, Texas, Tennessee, and Georgia which has given him experience with a wide range of all different cuisines. He has created Classical, Cajun, Mexican, Italian, and German dishes, along with American and BBQ. He enjoys experimenting with new dishes and creating cuisine that is pleasing to the taste buds.
Chef Craig has worked in several different environments including being a head chef at resort hotels and country clubs. His favorite place to work thus far has been Four Oaks Manor. He has worked for Four Oaks Manor since the summer of 2012, and his favorite part about working at our venue is the diverse menus that he is able to create for our couples. He enjoys the challenge of exceeding customers’ expectations. His goal for each event is to execute a meal that leaves guests feeling as if it were cooked to order in a restaurant.
 
For every wedding and reception we host, we allow each couple to attend a tasting. At the tasting each couple is able to try several different meal options that we typically provide. Our couples are able to customize their menu accordingly. A couple of Craig’s most popular dishes are his Raspberry Chipotle Pork Tenderloin and his Chicken Parmesan. These dishes are often accompanied by Craig’s tossed green salad, garlic mashed potatoes, and his perfectly seasoned asparagus. However, each couple can choose from our list of sides if they prefer something different.
 
Chef Craig’s advice for any couple booking with Four Oaks Manor is to feel open to interacting with him and the coordinators. He enjoys communicating with the couples to help make their vision come to life. He aspires to making a meal that not only leaves the couple happy, but all of their guests happy as well.
